This is a great recipe for those of us who are allergic to dairy and soy products and yet still enjoy a good cream soup. Quick and easy its great for a quick lunch on a winter day.

1/2 cup olive oil, 1 cup diced onion, 2tsps. minced garlic,1 tsp. salt, 3/4 cup whole grain spelt flour, 2-13 oz. pkgs frozen broccoli florets, 2 cups original flavor rice milk, 1-32 oz. carton of Pacific Organic Free Range Chicken Broth.
Place a small amout of water in a microwaveable cassarole dish, add broccoli and microwave on high for 10 minutes or until tender. Saute onion and garlic in a medium sized sauce pan until tender. Stir in flour to make a paste. Add salt. Gradually add chicken broth stirring slowly. Place mixture into vitamix container. Drain water from broccoli, place all but 1 cup of florets into vitamix container, blend on high until smooth. If neccessary add a small amount of liquid for blending. Return contents to medium size sauce pan, add remaining broccoli, heat to thicken, stirring constantly. Gradually add 2 cups rice milk , heat to desired temperature. Serve.
