Roasted veggies with quinoa in Pacific Natural Foods Organic Roasted Red Pepper & Tomato Soup
This is a twist on my vegetarian mother's potatoe and veggie chowder. I just changed up some of the ingredients a bit to make it work with the scrumptious taste of the red lentil curry soup.
This is a super easy recipe that I got from a friend.
It takes just a few minutes to prepare, then it simmers in the crockpot. You can run errands, go to a soccer game, or work in the yard for a few hours, and have a hearty, creamy chili ready and waiting for you when you return.
A side of cornbread is a good partner.
