For centuries, the finest pizza makers in Italy have baked their pizzas on blazing hot stones next to an open flame. Our signature crust is tender on the inside and crispy on the bottom because we use a classic technique to bake the crusts in a hearth oven. Our crusts would be considered a medium thin crust ~ thin enough to deliver the bottom crispy texture we all love, but thick enough to handle our generous toppings.
Cured meats (luncheon meats, hot dogs, bacon) contain nitrites. Uncured meats and organic meats do not. Sodium nitrite (or sodium nitrate) is widely used as a preservative, antimicrobial agent, color fixative and flavoring in cured meats and other products. Nitrite is used to cure meat because it prevents bacterial growth and gives the meat a red color. However, nitrites in meat can react with degradation products of amino acids, forming nitrosamines, which are known carcinogens.
Numerous studies have found that nitrites contribute to a variety of negative health effects. Because “uncured” meat products contain no added nitrates or nitrites, our pizzas are a welcome addition to health-conscious consumers who prefer to avoid those preservatives both for themselves and for their children.

We use a blend of three cheeses ~ mozzarella, provolone and parmesan-reggiano cheeses.
When properly stored in your freezer, our pizzas are best if used by the date listed on the bottom of the carton. For best quality, do not allow the pizza to thaw and do not eat without cooking.
